Today’s menu is pure junk food…deep fried veggies and shrimp with Landshark!

Today, I used our Cuisinart Deep fryer, gifted to us by our daughter, Jeannine, to beer-batter fry:

yellow and red peppers, zucchini, asparagus, and shrimp.

I used `1 1/2 cup non-bleached flour, 1 1/2 cup beer, and 1 tablesppon salt for my beer batter.  You whisk it and let it sit for an hour or two before using.

The Cuisinart fryer is pretty simple…set to 375, allow to heat up…drop in your food!  Heat your oven to 225 and put your finished fried food on a plate in your oven to keep warm as you cook the balance of your food.  I cooked the asparagus and peppers for 4 1/2 minutes, the zucchini for 4 minutes, and the shrimp for 4 minutes.  I’d advise not overloading your frying basket…better to cook an extra basket or two than to try to overload it.

We had two dips…but here you can really suit your own taste…I made a shrimp cocktail sauce…1/2 part horseradish, 1/2 part catchup.  Lemon (1/4 to 1/2 for two) and tabasco to taste.  I also made a ranch dressing-based dip spiced up with Flag Hill spicy jerk rub seasoning to taste.
